Take the stress out of cooking with this one-pot dish from a MasterChef champion

Welcome to our new segment, “Recipe of the Week”! Each week, we will be sharing delicious and healthy recipes from all around the world. And this week, we have something extra special for you – Ping Coombes’ baked honey and soy chicken rice!

Ping Coombes, the winner of MasterChef UK in 2014, is known for her love for Asian cuisine and her unique fusion of flavors. And her recipe for baked honey and soy chicken rice is a perfect example of her talent. It is not only packed with flavor, but also with fiber, making it a perfect meal for a healthy lifestyle.

So let’s get started with the recipe!

Ingredients:
– 6 chicken thighs
– 1 onion, roughly chopped
– 2 cloves of garlic, minced
– 1 inch ginger, grated
– 2 tablespoons soy sauce
– 2 tablespoons honey
– 1 tablespoon sesame oil
– 1 tablespoon vegetable oil
– 1 cup basmati rice
– 2 cups chicken stock
– 1 carrot, chopped
– Handful of green beans, chopped
– Salt and pepper to taste

Instructions:
1. Preheat your oven to 375°F (190°C).
2. In a mixing bowl, combine the soy sauce, honey, sesame oil, vegetable oil, minced garlic, and grated ginger.
3. Place the chicken thighs in the marinade and make sure they are coated well. Let it marinate for at least 30 minutes.
4. In the meantime, wash and drain the basmati rice.
5. In a baking dish, add the rice, chopped onion, chopped carrot, and green beans.
6. Pour in the chicken stock and mix everything together. Season with salt and pepper.
7. Take the marinated chicken thighs and place them on top of the rice mixture.
8. Cover the baking dish with foil and bake for 45 minutes.
9. After 45 minutes, remove the foil and bake for an additional 15 minutes or until the chicken is fully cooked and the rice is tender.
10. Serve hot and enjoy the flavorful and fiber-rich dish!

This baked honey and soy chicken rice is not only easy to make, but it is also a complete meal in itself. The chicken is tender and juicy, while the vegetables and rice are cooked to perfection. The combination of honey and soy sauce gives the dish a perfect balance of sweetness and saltiness. And the addition of sesame oil and ginger adds a unique depth of flavor.
