6. Pour in the chicken stock and mix everything together. Season with salt and pepper.
7. Take the marinated chicken thighs and place them on top of the rice mixture.
8. Cover the baking dish with foil and bake for 45 minutes.
9. After 45 minutes, remove the foil and bake for an additional 15 minutes or until the chicken is fully cooked and the rice is tender.
10. Serve hot and enjoy the flavorful and fiber-rich dish!
This baked honey and soy chicken rice is not only easy to make, but it is also a complete meal in itself. The chicken is tender and juicy, while the vegetables and rice are cooked to perfection. The combination of honey and soy sauce gives the dish a perfect balance of sweetness and saltiness. And the addition of sesame oil and ginger adds a unique depth of flavor.
But the best part about this dish is its nutritious value. Chicken is a great source of lean protein, while the vegetables provide essential vitamins and minerals. And the basmati rice is a good source of fiber, which helps in digestion and keeps you feeling full for longer.
